Zucchini Cheese Muffins

Ingredients:

i medium zucchini, grated, without squeezing
1/4 of crimson capsicum, finely diced (optional)
i loving cup grated cheese(s)
ii large eggs
Salt & pepper to gustation (more seasoning equally you lot prefer)
125g (1 cup) all-purpose flour
i tsp baking powder
Butter to grease the muffin tin

Directions:

  1. Heat the oven at 200°C, middle rack.
  2. In a mixing bowl, add together eggs, tabular array salt & pepper (other seasonings). Whisk until combined.
  3. Add the grated zucchini, crimson capsicum, too grated cheese. Mix well.
  4. Add one-half of the all-purpose flour, mix until combined.
  5. Add the remaining one-half of the flour too baking powder. Mix until combined.
  6. Grease the muffin tin compass notice alongside butter.
  7. Spoon the zucchini mixture into muffin tin compass notice until most full. Mine was made into 9.
  8. Bake at 200°C for 25 minutes. An oven may vary.
